A steam kettle is a necessity for bulk cooking. Working on the theory of induction, the kettle’s outer wall contains raw steam to cook the food inside evenly and would involve a staff holding watch over the cooking, which hampers time for other tasks. Thus, the Proveno Combi Kettle, because if the technology of automated cooking is applied in combination ovens, why not a
steam kettle?

Flexible & Accessible

Its control panel offers up to 99 programs that the user can store for easy access with its Customer Specific Function Parameters (CSFP). Using the parameters, the kettle’s functions can be configured to suit individual needs and has self-explanatory icons for each function. Productivity is improved when users can work remotely with the Wireless HACCP option that provides real-time temperature checking which can be monitored anywhere with internet connectivity; or via their mobile phones to access information and receive alarms on any irregularities. Also, users can build their own Proveno by combining the kettle size, power and optional tools.

 

Competent Results
The auto-reverse mixer does all the stirring and for ideal consistency, professional chefs were engaged to test the  intensity level of mixing for each program. True enough, the beef bolognaise sauce we tasted had bite in its meat and even delicate items like onions and carrots were not cooked to a mush. The mixer can be used to mix almost anything ranging from mashed potato, ice cream base to doughs and others.

Hot & Cold In One
Proveno Combi Kettles solves the logistics of transferring hot food to another container to cool with 5 cooling options:

Manual cooling (C1)
• uses tap water and hose is connected to water inlet.
• position of water faucets and steam jackets water inlet and outlet valves need to be set first.

Automatic cooling (C2)
• set target temperature and press start!
• uses tap water and steam jacket is automatically drained after cooling
• Cool&Hold

Automatic ice water cooling (C3)
• circulates cooled water between ice builder and kettle’s steam jacket
• closed circulation

TempGuard
A Proveno standard function, TempGuard keeps the accuracy throughout the cooking process and guides the heating of the kettle should there be a temperature change; such as adding raw items midway through cooking. It is fully automated, requires no settings and helps save energy by always remaining at half-power, unless changed. It also makes proving of dough safer and more accurate while BurnPrevent Control results in better quality of food and easy cleaning.
